INGREDIENTS
1/3 cup olive oil
2 tablespoons lemon juice
1 crushed garlic clove
1 cup baby rocket leaves
1/2 cup chopped flat leaf parsley
1/2 cup chopped fresh coriander
1/4 chopped preserved lemon rind (discard the pulp)
1/4 cup pitted, sliced green olives
salt and pepper
METHOD
Whisk together olive oil, lemon juice and garlic in a large bowl.
Add rocket, parsley and coriander.
Season with salt and pepper.
Add preserved lemon and olives.
Toss well.
