Sweet Short Crust Pastry

INGREDIENTS
1 cup flour
1 cup self-raising flour
125g butter
2 tbsp caster sugar
1 egg yolk
¼ cup cold water or milk (approx)

METHOD
- Sift flours into a bowl.
- Rub butter through flour with fingertips, till mixture resembles fine breadcrumbs.
- Add sugar and mix well.
- Mix into a dry dough with egg and milk beaten together.
- Turn onto a lightly floured board and knead until smooth.
- Roll out between two sheets of baking paper.
- Bake blind in moderate oven until lightly golden.

SERVINGS
1 pastry base

COMMENTS
Don't forget to use baking paper when baking blind!
